Crockpot Whole Chicken


Ingredients

  • Cooking spray
  • 2 tablespoons. packed brown sugar
  • 1 1/2 tsp. chili powder
  • 1 C. smoked paprika
  • 1 C. fresh thyme
  • 1 whole chicken, neck and giblets removed
  • Kosher salt
  • Freshly ground black pepper


Directions

  • Grease a large slow cooker with cooking spray. Roll a few small balls of aluminum foil and place them in the slow cooker, creating a grid for the chicken.
  • In a small bowl, whisk in the brown sugar, chili powder, paprika and thyme.
  • Pat the chicken dry with paper towels and season generously with salt and pepper. Rub the brown sugar mixture over the entire chicken, then place in the slow cooker, breast side up.
  • Cook on high for 2 ½ to 3 ½ hours, until the juice between the leg and the thigh is clear or a thermometer inserted in the thigh indicates 165 °.
  • Remove the chicken from the slow cooker. To make the skin more crisp, transfer the chicken to a large baking sheet and grill until golden, 3 to 4 minutes. Let stand 10 minutes before slicing and serving.
